cups baby spinach
½ cup purple
cabbage, chopped
½ cup fresh
blueberries
½ cup fresh
raspberries
BLUEBERRY
VINAIGRETTE
½ cup
blueberries

tablespoon raw apple cider vinegar
2
tablespoons extra virgin olive oil
1
small garlic clove
Sea
salt to taste
Black
pepper to taste
Prepare
your vinaigrette. Add blueberries, raw apple cider vinegar, extra virgin olive
oil, garlic, sea salt, and black pepper to a blender. Blend until smooth. Set
to the side.
Assemble
the salad. Add the baby spinach, purple cabbage, fresh blueberries and raspberries
to a large salad bowl. Top with blueberry vinaigrette and mix until well
coated.
Add chicken and/or cooked quinoa for added protein!
